Yummy blueberry muffins!!!!

2 c plain flour
4 tsp baking powder
½ c caster sugar
1 pinch of salt
1 egg
1 c buttermilk or milk
¼ c oil
1½ c blueberries (fresh or frozen)

Sift flour, and combine with sugar and a pinch of salt. Separately combine the egg, buttermilk and oil, and blend together using a hand blender. Add wet ingredients to the dry, add blueberries, and mix very lightly to combine. The mixture should still look lumpy.
Spoon mixture into greased muffin pans and bake at 170°c for 15 minutes, or until risen and golden, and a skewer comes out clean when inserted.
Dust with icing sugar to serve.
