No cooking required!!!



Here is a selection of nice recipes. I've tried all of them and they're all good!! Most of them are ready in 5 minutes or less. They're good to know when we're feeling a bit lazy but still want to impress the audience.

Dips and aperitif
You can do some guacamole with chips. 
A plate with parmesan cheese and bruscettas (some toasted bread with a bit of garlic on it, cut tomatoes and basil, with olive oil, salt and pepper).
Bread sticks with prosciutto rolled around.
Fresh cut vegetables with dip (mix some mayonnaise, low fat yogurt, some chives, salt and pepper).

Cheese Platter
Make a selection that you like (this is too personal to tell you which ones to choose)
Have it with sultana bread, I also like it with nut bread or baguette.
Some grapes on the side and a green salad.

Chilled avocado soup
2 ripe avocados, peeled and pitted
1 tablespoon dry sherry

1 quart chilled chicken stock
1/2 cup light cream
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1/2 cup sour cream paprika
Blend all ingredients except the sour cream and paprika in the electric blender until smooth.
Chill 4 hours. Serve topped with sour cream and a sprinkling of paprika.


Melon with prosciuto
You can do melon, pears, figs...

Caprese salad
Burrata or Buffala (I prefer the first one)

Tomatoes ('coeur de boeuf' are the best ones for me, the best taste)
Fresh basil and olive oil.
Slice the tomatoes and Mozzarella and put on a plate.
Add some olive oil, salt, pepper and basil. 
I sometimes add some prosciutto on the side....

Green taboulé
1 cup Couscous

Herbs: Basil, Coriander, chives, flat parsley and parsley... (whatever you like)
1 tbsp Soy sauce and 1 tbsp lemon (you can add more if needed)
Cook the couscous and leave it on the side.
Mix all the herbs together and cute them finely and mix it with the couscous. 
Add some soy sauce and lemon juice.
