Delicious recipe!!!!

Since I've moved to Los Angeles, I've slowly become addicted to mexican food.....We even do tacos Monday at our house and the kids love it. I've found this very easy recipe and it's suitable for the whole family.
I hope you enjoy it!!!!


Prawn ceviche with guacamole and white corn tortillas

4 tomatoes, peeled and seeded, diced
2 cucumber, peeled seeded, diced
2 tbsp olive oil
1 kg small prawns, peeled, veined
Juice 10 limes
2 spanish onions finely chopped
1 ½ tsp tobasco
Guacamole
White corn tortillas


Place tomato and cucumber in a small bowl, add olive oil cover with plastic and refrigerate.  Place prawns in a non reactive bowl, add lime juice, 1 cup water and onion.  Season to taste combine well.  Cover with plastic wrap and refrigerate for at least 40 minutes until the prawns start to turn opaque.  Add tomato and cucumber mix and tobasco and combine well.
Make guacamole
Heat up the tortillas, et voilà......
